* Step 1
Grate the sweat potato then with 3 tbsp oil immediately pan fry it till crispy then flip over and pour in the eggs
* Step 2
Season with Japanese 7 spice and dried Parsley, cover with lid for 1 minute or longer till egg White are set but yolk are still Runny then diveded into 4, off heat and serve with rice
