Potatoes in tomato sauce

My depressingly nostalgic day had to end on a good note somehow. Any preferred seasoning can be used but if you’re looking to keep it plain yet flavorful, follow recipe instructions.

Cooking instructions

* Step 1

Peel potatoes and cut into cubes. Transfer potatoes into a pot with water, completely submerging the potatoes. Season with salt, garlic clove and turmeric. Let boil until you can easily pierce a fork through the potatoes. Drain and set some of the water aside for making the sauce

* Step 2

Meanwhile make the tomato sauce by first heating oil on medium-high heat. Sauté onions and chopped chillies until soft, add tomato and cook down for a bit

* Step 3

Add some of the turmeric water and halved cherry tomatoes. Cook for 2 - 3 minutes (we don’t want the cherry tomatoes to fully cook and get mushy). Season with salt and pepper

* Step 4

Pour sauce into potatoes and mix until fully incorporated
