Potato & Mangodis ki sabji

Mangodis are small dumplings that are made with moong dal and spices and dried in the sun. Once dried in this manner, it can be stored for a few weeks easily. My mum would make mangodis but I prefer to buy them from stores. These dumplings are nutritious and healthy.

Cooking instructions
* Step 1
Add 2 tbsp cooking oil in a pressure cooker. Fry moong vadi till golden brown colour. Then remove it in a plate.
* Step 2
Wash peel and chop potatoes.
* Step 3
Wash, peel, chop and grind onion, ginger, garlic, green chilli and tomatoes in a mixer to a smooth paste.
* Step 4
Now add the remaining 1 tbsp cooking oil in the pressure cooker and add cumin seeds and when cumin seeds splutter put grinded paste and saute till oil leaves the sides. Add salt, red chili powder, turmeric powder, and coriander seeds powder and mix well. Add Kasuri methi and mix.
* Step 5
Now add chopped potatoes and fried Vadis and mix and saute for 2-3 minutes. Add water and mix.
* Step 6
Place the lid and cook till 2 whistles. Switch off the flame and let pressure release automatically. Open the lid and mix garam masala.
* Step 7
Serve hot with methi poori or parantha.
