Cooking instructions
* Step 1
Peel bitter gourd. Salt it and keep overnight. In the morning, wash bitter gourd in running water and squeeze excess water by pressing them between your palms. I use skin of the bitter gourd for filling.
* Step 2
Now chop onions lengthwise. Take 5 green chillis. Make tomato puree by grinding tomatoes.
* Step 3
Now fry bitter gourd in a karahi till golden brown colour. I use mustard oil In karela as it enhances the taste. Add salt, turmeric powder and red chilli powder.
* Step 4
Remove karelas in a plate and now add skin of karela in the karahi and fry for 5 minutes.
* Step 5
Now add chopped onions and fry till golden brown colour.
* Step 6
Add tomato puree and whole green chillis. Add salt, red chilli powder, turmeric powder, coriander and fennel seeds powder and mango powder and fry for 5 minutes. Now put whole fry bitter gourd in this mixture and stir for 5 minutes till bitter gourd absorbs spices and tomato puree.
* Step 7
Bitter gourd is ready. Let it cool. Now fill a little mix masala in bitter goud cut. Serve with paratha.
