Crockpot Holiday Lean Pork Chop Supreme
This one will bring a Big Surprise and Smiles on the faces of Guests! I had a few tell me they thought if their eyes were closed they were eating Peking Duck!

Cooking instructions
* Step 1
Quick Braise Chops in Pan on Stove, Add Braised Chops to Crockpot.
* Step 2
Add water, just to cover chops. Saving any leftover to the side. Cover, put Crockpot on Medium. Allow to cook 1-1½ hours.
* Step 3
While Chops are cooking in Crock, Peel, core, and Quarter Apples. Set to the side.
* Step 4
Peel, and chop White Sweet Potatoes to Desired Size. Add to the side with Apples.
* Step 5
Wash, and chop off root end of Shallots, and any wilted Green tops.
* Step 6
Continue with Shallots, Chopping small, including the fresh green tops.
Add to Crock with Chops.
* Step 7
Chop off Root and tops of Celery.
Chop thinly, Add to Crock with Chops, Checking Water level.
If too high, remove some with a Cooking Syringe made for this purpose, add to water left on the side. Or if needed, add water carefully from measuring cup.
* Step 8
If you Purchased Full sized carrots. Chop off Root ends. And chop carrots to appropriate size. If Baby Carrots, Wash ½ the bag. Add either Chopped Carrots, or Baby Carrots to Crock.
* Step 9
Clean, and Chop Portobello Mushrooms.
* Step 10
Add All remaining Chopped ingredients to Pork Chop mixture in Crock. And your ½ box Raisins.(I'm aware it's getting very packed. It Will cook down)
* Step 11
Most of your time has been Preparation. But it's worth it. Watch your Crock closely. Add or remove liquid to Crock as necessary.
* Step 12
Prepare Apricots, peel, core, and slice. Unless you purchased Dried, Shrink Wrapped Apricots. Add to Crockpot mixture.
* Step 13
Check your Chops, and Sweet Potatoes for doneness. The Chops should almost fall apart. If done to that point. Remove just enough broth into a container to cool and freeze for Stock.
* Step 14
At this point, Carefully spoon in the Preserves you have had waiting. Stirring to Coat as you add. Once you have finished adding your Preserves, and carefully stirring, Make Certain your Crockpot is at the Lowest Setting.
* Step 15
When the mixture begins to bubble, all vegetables, everything should be done.
* Step 16
Carefully scoop out A Pork Chop, and some of each ingredient that hasn't cooked away. Your Apples, Apricots, and Sweet Potatoes onto plates.
* Step 17
Get out a Soup Ladel.
Carefully scoop out ladels of the Broth. It Will be Quite Thick, and Sweet from the Fruits.
Gingerly pour over Your Pork Chops, and other ingredients..
