Greek Cucumber Walnut Bites

Vegetarian food if consumed in a healthy way is ideal for good health. On the occasion of this Day I chose these Bites which are enjoyable as Breakfast or as snack. Eat healthy always!

Cooking instructions
* Step 1
For hummus - soak chickpeas overnight, discard the water, add to the pressure cooker and on medium flame for 5 whistles, cook, strain the water but retain it
* Step 2
Roast the capsicum until well done. Cool, peel the skin, deseed, cut the stock, chop into 1” cubes
* Step 3
Add to the blender the capsicum, tahini, cumin powder, garlic cloves, olive oil, lime juice. Run in pulse mode, add the boiled chickpeas
* Step 4
Add the boiled chickpeas water and run the blender smooth. Set aside
* Step 5
Take the cucumbers, wash and cut the sides. Cut 3/4” thick and carefully with the back of the spoon scoop the seeds
* Step 6
Retain the bottom of the cucumber and sides.
* Step 7
Add the hummus, feta cheese into the cucumber. Garnish with pomegranate seeds
