A perfect Breakfast , could be a Brunch and could be a main meal too. This is a classic food for many at any given point of day. For me at least for sure

Cooking instructions
* Step 1
Garlic Mayonnaise - in a blender break a egg, add oil, lime juice, salt and in pulse mode blend until all well combined, then run in to make a thick smooth mayonnaise. Add minced garlic to it, chopped parsley, mix. Your mayonnaise is ready, set it aside
* Step 2
For Sandwich - with a sharp knife slice the boneless breast, smear ginger-garlic paste, salt and pepper.
* Step 3
In a grill pan add olive oil and add the chicken breast, on medium flame cook until well done, set aside and slice thin. Set aside
* Step 4
Slice the onions fine. Smear salt. In a pan heat oil and the onions and caramelise them, add 1/4 cup water if need be if you think the onions are dry, set aside
* Step 5
Make a poach in a pan by heating oil, break the egg and cover to make it firm for 1-2 mins, set aside
* Step 6
In the grill pan heat butter add the breads and grill until well done, set aside, cut the crusts.
* Step 7
Assembling - smear mayonnaise on one slice of bread, add baby spinach, add chicken slices, add caramelised onion, take another slice of bread and smear mayonnaise on both sides, place it on the already made bread.
* Step 8
On the second slice, add sliced tomatoes, poached egg, season with salt and pepper, add the third slices of bread with its inside mayonnaise put on. Press well
* Step 9
Cut diagonally first and then turn to cut diagonally again. Add tookpicks to hold it in place
* Step 10
Plate with French fries and enjoy the Chicken Club Sandwich
