Pumpkin Pancake

#toc3 I made my brunch with Pumpkin Pancake. I used plant based product. It’s #WorldHeartDay and we need to protect ourselves to have a strong heart to fight against all diseases specially heart related disease. With so much of stress in our lives which effects our hearts, our food style should be to have a healthy heart. So plant based Pumpkin Pancake it is, nutritious, filling, tasty and loved it

Ingredient

Cooking time :

Preparation time-10mins, Cooking time-20mins
150 gms

spelt flour

1/2 tsp

baking soda

1/8 tsp

salt

Cooking instructions

* Step 1

For pancake - in a bowl add milk and apple cider vinegar. Mix, let it curdle within 5-10 mins. Set aside

* Step 2

In a mixing bowl add pumpkin purée, curdled milk, coconut sugar and whisk well

* Step 3

Add spelt flour slowly, add pumpkin spice powder, salt, baking powder, baking soda, whisk and set aside for 5 mins covered

* Step 4

Pumpkin Spice powder - in a bowl add 2 Tbsp cinnamon powder, 1 tsp ginger powder, 1 tsp cloves powder, 1 tsp Allspice powder, 1 tsp nutmeg powder. Mix

* Step 5

Pumpkin puree - wash the pumpkin, peel, cut into small pieces. In a wok heat 1 Tbsp oil and fry the pumpkin pieces on low flame 2-3 mins each side. Once browned, set aside to cool. Add to a blender and blend smooth. Pumpkin purée is ready to use for your various dishes. Can be refrigerated for a week in airtight container

* Step 6

In a wok on medium flame grease and pour a ladle, let bubbles surface, edges should fry, for 2 mins, flip and cook. Set aside

* Step 7

Complete the batch.

* Step 8

Plate with fruits of your choice and enjoy a healthy breakfast or brunch
