Brown Rice & Mushroom Soup

#boxweek15 Brown Rice has so many health benefits- helps in reducing weight, has selenium which helps to fight cancer, has good fiber content, tends to keep one full so small portions are needed to eat. I combined with Mushrooms which equally has lot of health benefits besides good to taste.

Ingredient

Preparation time-10 mins, Cooking time-50 mins
1/2 cup

Carrots

1/4 cup

White wine

1/2 cup

cream

as per need

Salt

as required

Pepper

as needed

Butter to cook

Cooking instructions

* Step 1

Wash the vegetables and Mushroom. Cut the mushroom into small pieces, chop the carrots, chop the onions and garlic

* Step 2

In a heavy bottomed wok boil the rice as it takes time to cook Brown Rice. Cook until 3/4th done. Strain and set aside

* Step 3

In a wok melt butter, add chopped garlic and onions and cook until onions softened, add mushrooms and cook until mushrooms looses moisture and is softened

* Step 4

Add white wine for glaze and when it evaporates, add chopped carrots to give colour, apple cider vinegar. Stir. Add vegetable stock. Add bay leaf, thyme. Stir. Add cream

* Step 5

When it comes to boil, add boiled rice and on medium flame cook for couple of mins. Add salt and pepper and stir. Set aside to serve

* Step 6

Add the Rice Soup to a bowl, add a slice of brown Sourdough bread and garnish with a coriander leaf. Enjoy a hearty meal
