* Step 1

First knead the dough and keep a side for 1/2 hr. Take kneading plate add flour, salt, oil mix it well and add little water and knead soft dough. Add a tsp oil and knead it again. Cover it with samp cloth.

Now for Stuffing: Take a mixing bowl. Add paneer chopped green Garlic, chopped coriander, salt.

Add turmeric powder, chat masala, dry mango powder, red chilli powder. Mix it properly. Stuffing is ready.

Now make equal parts of dough. Make balls out of it. Roll it in dry flour and roll it on flat surface.

Spread the stuffing on whole roll roti. Cut it from one side. And start rolling like a cone.

Roll it like a cone and flat it from the top and make flatten ball.

Flatten with hand and dust the flour and roll it.

Take the griddle/tava on medium flame. Place the Paratha on it. Cooked it from one side and flap it to another side. Put tsp oil. Spread it on whole Paratha.

Roast it properly from both the side.

* Step 1

Take a wok, add oil, heat it. Add dalchini, elaichi, green chilli & ginger, saute it for 30 sec. Add tomato puree & salt, mix it well.

Lower the flame, cover it with the lid, cook it until oil has oozed out.

Open the lid, increase the flame, add green chilli paste & Kashmiri red chilli powder, mix it well.

Add dahi now, mix it well. Cook it covered on low flame until oil has surfaced.

Open the lid, increase the flame, add garam masala powder, mix it well.

Cook it covered on low flame until saucy. Turn off the flame, open the lid after 5 minutes.

For Scrambled Paneer.... Take a pan, add oil, heat it. Add onion & green chilli, stir fry it for a minute.

Add bell peppers & tomato, in goes salt also, stir fry it for a minute.

In goes ginger garlic paste, stir fry it until rawness is released.

Now haldi powder, dhania powder & red chilli powder, mix it well.

Add paneer now, mix it well, cook it for 2 minutes.

In goes garam masala powder, stir fry it for 2 minutes. Add dhania patta, mix it well. Stir fry it for a minute.

Turn off the flame, keep aside.

For Roti.... Take a mixing bowl, add both the ata & lil salt. Knead a soft dough by adding water slowly slowly. Brush 1 tsp oil, knead it again. Keep aside for 5 minutes.

Take small portions of the dough, roll it, make a med sized roti.

Heat an iron tawa, place the roti on it. Cook it both sides flipping until light brown.

Hold the half cooked roti with a pair of tongs, cook it directly on the flame until brown.

Now take a small bowl, add paneer bhurji, keep it in a serving dish. Arrange the rotis in the same dish. Serve it during breakfast...

* Step 1

Take a wok, add oil, heat it. Add green chilli & onion, stir fry it until light brown.

* Step 2

In goes ginger garlic paste, saute it until rawness is released. Add lil water to avoid burning.

* Step 3

Now add haldi, dhania & red chilli powder, and mix it well. Add lil water, and mix it well. In goes besan, cook it until light oil has oozed out.

* Step 4

Add in tomato & salt, mix well. Lower the flame, cover it with the lid, cook it until tomato becomes mushy.

* Step 5

Open the lid, increase the flame, add garam masala powder, Kashmiri red chilli powder & kasuri methi, and mix well.

* Step 6

In goes paneer, stir fry it for a minute on high flame. Add 1 cup boiled water, mix it well. Give a boil.

* Step 7

Cover it again, cook it on low flame until desired consistency. Turn off the flame, open the lid after 10 minutes.

* Step 8

Take out in a serving bowl, garnish it with a dhania leaf 🌿.

* Step 9

Can be served along with Roti or Paratha...
