* Step 1

Put the soaked matar dal with 3 green chillies in a blender and blend to a fine paste.

Pour the paste into a bowl and add salt as per taste. Set aside.

Now heat mustard oil in a pan. Once the oil is hot add 1 tsp of the dal paste in the shape of a ball.Deep fry the balls and keep aside. Repeat the process till all the dal paste is deep fried into balls.

Now heat 2 tbsp mustard oil in another kadai. Once the oil is hot add the panch foran.

Once the panch foran starts spluttering, add the mustard paste. Simmer and cook for 5 minutes. Add turmeric and salt and let it simmer for another 10 minutes.

Now add the 'boras' to the mustard gravy and let it cook for another 20 minutes.

Once done remove from stove and serve with steamed white rice.

* Step 1

In a bowl take all-purpose flour, salt, oil and carom seed. Mix well. Add warm water, knead a firm dough. Rest it for half an hour.

Heat oil in a pan. Add panch foran and hing. Stir for few second. Add chopped potato. Cook for 2-3 moment. Add cauliflower and green peas. Cook for 2 minutes on medium flame.

Add salt, turmeric powder, green chilli, coriander powder, kasuri methi and garam masala powder. Cook for 2 minutes. Close with a lid.

When the vegetables are soft then add chat masala and coriander leaves. Mix well. Switch the flame off. Cool the mixture.

Now knead the dough again. Make equal balls from the dough. Take one ball, roll it like a chapati. Cut it into rectangular shape.

Cut it in half from the upper side, cut into strips. That shown in picture. Then cut into strips in the opposite direction.

Place the filling in the centre as shown in the picture. Wet the edges with water. Cover the filling with the part in the opposite direction. Seal it with water.

Now take one strip and cover the samosa. Take one strip from another side and make a mat design with all strips as shown in picture. Repeat the process.

Now heat oil in a pan for frying. Deep fry the samosas in low flame. Fry both the sides. Till they are golden in colour. Take it out from the pan. Serve it with green chutney and tomato sauce.

* Step 1

Make a slit in the center of the bitter gourd. Boil the bitter gourd with 1 cup of water and little salt.Than remove all seeds.

* Step 2

Heat a kadai with 2 tbsp oil and add chopped onion, chopped chilli, fry one minute, then add mashed potato, mashed Paneer salt to taste chat masala, cook for two minutes, than keep aside.

Now fill this stuffing into the bitter gourd with the help of a spoon.Fill all the bitter gourd same way.Again heat a kadai with 1 tablespoon oil to fry all stuffed bitter gourd, fry both side.While the bitter gourd are being fried then add one by one spices for the tempering.

Then add tamarind pulp, jaggery, sugar cook for 3 minutes and mix it properly. Then add mustard paste mix it further, then serve bitter gourd sweet and sour (chat pata) karela ready to eat.

Wash the grapes.

* Step 2

Heat oil in a pan,add panch foran,asafoetida and whole red chilli to crackle.

* Step 3

Add grapes,red chilli powder,turmeric powder,salt,sugar and roasted cumin seeds powder and mix well

* Step 4

Switch off the flame.

* Step 5

Now grapes pickle is ready to serve.
