Fresh tomato and mozzarella pasta 🍝 - Lunch idea for busy weekdays💡-
I cooked this for my lunch today! Simple, healthy and fulfilling😋 Original recipe is from @tomo and I just added slightly more garlic.

Cooking instructions
* Step 1
Boil water, add salt and cook pasta according to the package instructions.
* Step 2
Bring a pot of water to the boil. Place tomatoes in the boiling water and cook until the skins begin to peel off (30 sec). Remove the tomatoes, cool them for a while and cut them in diced sizes.
* Step 3
Add the olive oil and garlic to a pan and turn the heat to medium. Heat up until the garlic is fragrant and turns to light brown.
* Step 4
Remove the garlic on a plate.
* Step 5
Add tomatoes and mozzarella cheese in the pan. Cover with a lid.
* Step 6
Sprinkle herb salt and pepper. Once the pasta is cooked, add them in the pan and mix well.
* Step 7
Serve on a plate and sprinkle some dried parsley.
