Nitamago (Flavored Boiled Egg)

You can find these very often as a topping for ramen. Adjust the boiling time for hardness of the eggs to your taste. You can add in a salad, soba (buckwheat) noodles, udon, pasta, gratin, on the rice, toast, with meat...and so on. Nitamago can be used for various dishes (or of course only the egg itself is enough) so it's good for you to make many at once when you have time.

Ingredient

Food ration :

2 servings
MARINADE:

(per 2 eggs)

1 1/2 Tbsp

soy sauce

1 1/2 Tbsp

mirin

1/2 Tbsp

sugar

Cooking instructions

* Step 1

Bring the water to a boil in a pot. Put the eggs in the boiling water carefully with a spoon so that they won't break. Lower the heat, but still keep boiling for 6:30 to 7 minutes.

* Step 2

Quickly drain water and put them in iced water (It makes it easier to peel). Then peel.

* Step 3

Mix the ingredients for the marinade in a ziploc bag. Put eggs into it and squeeze out the air and seal up a bag. Soak for half day to overnight.
