Lebanese style deep fried aubergine 🍆
Aubergines in Lebanon are mostly eaten deep fried, in addition to baba ghannouj, and enjoyed in a wrap filled with tahini sauce, deep fried cauliflower and fries, or as a side on a big family Sunday meal such as bbq or fried fish! Very simple yet full of deliciousness
Cooking instructions
* Step 1
Roughly peel and slice the aubergines into slices 1cm thick. Sprinkle some salt
* Step 2
Add oil of (around 2cm depth) in a wok or deep pan/pot. Heat it up
* Step 3
Add as many slices of aubergines as you can, but don’t overcrowd the pot/wok. Fry for a few minutes on each side until nice and gold.
* Step 4
Place the aubergine on a kitchen towel to absorb the excess oil. Enjoy with flatbread and tahini sauce. https://cookpad.com/uk/r/16315643
