Sweet and sour Ash Gourd Curry is a traditional and delicious recipe prepared without onion and garlic. This curry is offered as a bhog to Deity Lord Jagannath, Puri, Odisha

Cooking instructions
* Step 1
Arrange the ingredients. Wash and remove the outer skin of ash gourd and chop them.
* Step 2
Heat oil in a kadhai, add allow to crackle ponch phutan. Add dry red chillies, asafoetida and curry leaves too. Saute on low flame till aromatic.
* Step 3
Then mix chopped ash gourd, add turmeric powder and salt to them. Cover and cook till ash gourd chunks are soft.
* Step 4
Add chilli powder, tamarind paste and jaggery powder.
* Step 5
When fully cooked, add ginger powder and crushed carom seeds to the cooked ash gourd.
* Step 6
Finally, mix grated mango flavoured ginger and grated coconut. Mix well. The ash gourd curry is ready to serve with steamed rice and roti.
