Orange Jaggery Marmalade
I have recently started substituting sugar with Jaggery in many of my desserts. So when I decided to prepare Marmalade, I added jaggery instead of sugar, and it tasted delicious. It is also rich in calcium, vitamin C and iron.

Cooking instructions
* Step 1
First, remove the white fibres on the orange peels (pith) and cut them in small strips.
* Step 2
Squeeze juice of oranges and add to a deep steel saucepan. You can chop the orange segments and add too. Also add the peels and start cooking on low heat.
* Step 3
Cook for 5 minutes. Then add jaggery powder, water,cinnamon stick and cook further till it thickens. Cook till you get 1.5 string consistency. The colour will be dark brown with glimpses of orange 🍊🤎🧡🍊
* Step 4
Remove from heat and cool completely. Store in a sterilized glass jar. Enjoy with at all breakfast meals.
