Seasonal vegetables in the oven

This is a very simple vegetable dish. It can be served as a warm salad, or as a side dish for meat. It is quite self-sufficient. Mushrooms make it rich and satisfying. #vegetables

Cooking instructions

* Step 1

Cut eggplant into small cubes. Pour into a baking dish.

Sweet pepper and mushrooms cut into small pieces. Add to eggplant.

Onion cut into half rings. Add to other vegetables. Salt to taste.

Season vegetables with salt to taste and add spices. I suggest the ones I have, but you can use whatever you like.

Mix everything well. Preheat oven to 180 degrees.

Pour in the tomato. I have Italian from a can, with pieces of tomato. Put in a preheated oven.

Focus on your oven. Maybe the temperature needs to be increased. It took me 40 minutes.

You can pour more tomatoes, but the vegetables will let the juice go. I love when this dish does not have a lot of liquid.
