Seasonal vegetables in the oven
This is a very simple vegetable dish. It can be served as a warm salad, or as a side dish for meat. It is quite self-sufficient. Mushrooms make it rich and satisfying.

Cooking instructions
* Step 1
Cut eggplant into small cubes. Pour into a baking dish.
* Step 2
Sweet pepper and mushrooms cut into small pieces. Add to eggplant.
* Step 3
Onion cut into half rings. Add to other vegetables. Salt to taste.
* Step 4
Season vegetables with salt to taste and add spices. I suggest the ones I have, but you can use whatever you like.
* Step 5
Mix everything well. Preheat oven to 180 degrees.
* Step 6
Pour in the tomato. I have Italian from a can, with pieces of tomato. Put in a preheated oven.
* Step 7
Focus on your oven. Maybe the temperature needs to be increased. It took me 40 minutes.
* Step 8
You can pour more tomatoes, but the vegetables will let the juice go. I love when this dish does not have a lot of liquid.
