Tomato Soup

The Recipe is from a Soup Book . If I did not follow a Recipe I would probably roast Vine Tomatoes in the oven and then allow them to cool and then blitz with cold cooked fried onions or cold cooked Roasted Onions and then blitz with the cold cooked Vegetable Stock . Seasoning very important , use the right amount of Salt and Black Pepper or White Pepper , grinds of Black Peppercorns . Can just use only Salt . Cooking time includes reheating in the Microwave about 6 minutes for a less powerful wattage Microwave (700W)

Ingredient

36 minutes

Olive Oil

25 ml

milk

Cooking instructions

* Step 1

Heat the oil gently in a saucepan. Add the chopped onions and garlic, cooking gently for about 10 minutes or until soft. Do not allow to brown

* Step 2

Add the tomatoes and cook for a further 10 minutes. Add in the water and lemon juice and simmer for a further 5 minutes

* Step 3

Allow to cool to room temperature

* Step 4

Pour the contents into the Nutri Ninja and blend for 30 seconds or until smooth. Add more stock or hot water if required

* Step 5

Return the contents to the saucepan and stir in the cream and milk over a gentle heat

* Step 6

Season with salt and pepper if required. Serve
