Banana & Custard Tart

I used to make this dessert for my kids quite often. It was one of their favourites, but they were in doubt at first because they had never tasted cooked bananas before. This tart tastes best when it is cold. So I recommend to cool it completely. I cooked it for the first time in many years to take this photo, and it instantly brought back my children (not children any more) their childhood memories.

Cooking instructions

* Step 1

Preheat oven to 160 to 170C. Place the frozen sweet pie base on an oven tray. *I am sure that the home made sweet tart base would taste a lot better, but I always used ready-to-bake frozen Sweet Pie Base for this, and it is just fine.

* Step 2

Mix Eggs, Sugar, Cream, Flour and Vanilla very well, then warm in the microwave. Do not cook the mixture, you just need to warm it at low power for a few minutes.

* Step 3

Cut the bananas about 2 to 3cm and arrange the pieces on the pie base. If the pie base is still frozen, it is OK.

* Step 4

Pour the Egg mixture over the Banana pieces and sprinkle some Almond Flakes, then bake for 50 minutes or until the custard is cooked and golden. Cool completely.
