Fruit Date and Nut Cake is a rich, delicious and an excellent Cake that almost everyone knows. In this one, I have used almost all the Dry Fruits, Tutti Fruiti and most importantly Dates. I have incorporated Dates in this one for a lovely taste and flavour. A beautiful twist in all.
It's an awesome one at that and most of us know it since childhood. I hope many of you will agree when I say that it formed an integral part of our childhood memories. Isn't it guys? The freshly baked Cake from the choicest of bakeries near our houses made our day. YEH UN DINON KI BAAT HAI!
The lovely aroma of it will fill our hearts with an eager to take a quick bite of it. It's yummy with evening Tea and is a lovely tea-time accompaniment.
It's made on many occasions too. And is most popularly called Christmas Cake too.
But without any alcohol traces, this one is relished by my family on many a family get togethers and reunions. And I have made it exclusively in my own way. So let's get started then.

* Step 1
In this particular Cake, the changes I have made are absolutely responsible for it's super duper fluffy texture and flavour too. The important change in this that I have made is to beat Egg whites until stiff and done. The yellow part or the Egg Yolk can be whisked separately along with Sugar and Oil. The second change that I have made is to use Oil instead of Butter.
* Step 2
Sift all the dry ingredients as we usually do in any Baking. Fold it in the wet mix along with all the Nuts, Seeds, Dates and Tutti Fruiti. Use Milk while mixing.
* Step 3
And then lastly, fold in the Egg whites slowly until incorporated well. Tap it once and bake on 160° in a fan assisted preheated oven for about 40 minutes or until done.
