Ingredient

1 cup (or more)

sugar

2 and 1/2 cup

water

Cooking instructions

* Step 1

Heat 2 Tbsp ghee and roast cashews in a wide vessel. Remove fried cashews and set aside.

* Step 2

Add the remaining ghee in the same vessel and start frying sooji and sugar on low flame till golden brown. The sugar is caramelized and gives a beautiful colour.

* Step 3

In the meantime heat the water to boil. Lower the flame and start pouring semolina sugar mixture little at a time and stirring occasionally to avoid lumps.

When the consistency of sooji gradually becomes thicker, and add cardamom powder and some fried cashews.

* Step 5

Sooji halwa is ready. Transfer to a bowl, make upside down of the same bowl to get the lovely semolina halwa. Serve hot or cold.
