Shevgyachi Kadhi (Drumstick beans Kadhi)
In Maharashtra, piping hot Kadhi made from buttermilk, gram flour spices and boiled drumstick beans is the pride of the meal platter. Being delicious and very rich in proteins, vitamin B12, Vitamin A and lots of immunity boosters, it's a must-have for all age groups. Drumstick or Moringa or Shevgyachya shenga are super foods. They are rich in vitamin C, Vitamin A, Vitamin B, calcium, iron, potassium and fibre.

Cooking instructions
* Step 1
First, cut the Drumstick beans into finger length pieces.. Transfer to a saucepan. Add 2 cups water and 1 tsp salt. Cover and boil on low flame for 10 minutes till soft.. Cool to room temperature. Also, you can cook in Microwave on high for 10 minutes by adding 1/2 cup of water to the Drumstick beans in a glass bowl.
* Step 2
Then take a bowl, mix besan with 2 tablespoons of yoghurt. Make a paste. Then churn the rest of yoghurt into buttermilk by adding water in batches Then add the besan mixture.
* Step 3
Slow boil this buttermilk and besan mixture without letting it get split. Keep stirring. Then add boiled Drumstick beans, chilli powder, sugar, cumin powder and mix well. T
* Step 4
Then heat ghee in a tadka pan. Add cumin seeds and let them pop. Then add hing, curry leaves, chopped green chillies, ginger, hing and turmeric powder.
* Step 5
Then mix this tadka in the besan mixture. Stir well. Cook on a slow flame for 5 minutes. Just when it starts to boil, switch off the heat. Add salt as per taste after taking off from flame.
* Step 6
Garnish with chopped coriander leaves and serve with rice, khichdi, Pulao or biryani too.
* Step 7
Cooking Tip:
Add salt after switching off the flame to Kadhi. It will help to keep it uniform and avoid separation of water and besan and give a very good taste.
