Finger Millet or Ragi is a staple since ancient times in many parts of our country. It's rich in calcium, protein, fiber, zinc, iron and magnesium. It's a wonder food for growing kids, elders and lactating mothers. It can be prepared in many ways. I have made Ragi Cookies which can be enjoyed by both elders and kids.

Cooking instructions
* Step 1
First, sieve ragi and wheat flour, milk powder, cornflour, baking soda and salt thrice and keep in a deep glass bowl.
* Step 2
Then warm the milk. Add jaggery and dissolve it completely in milk. Do not allow milk to boil. Switch off flame as jaggery melts.
* Step 3
Add ghee and vanilla to the milk. Mix well. Preheat oven to 180°c for 10 minutes.
* Step 4
Add milk slowly to the flour mix. Lastly add tutty fruity if desired.Combine gently to a soft dough. Do not over knead. Add some more milk if needed.Co ver and keep for 5 minutes.
* Step 5
Then make small balls of the dough and flatten them a little. Line a baking tray with parchment paper. Brush lightly with oil. Or line with silicone mat.
* Step 6
Arrange the cookies on the tray. Keep some distance for cookies to expand. Then place in preheated oven and bake for 12 to 15 minutes till crisp. The colour will darken. Do not overbake and keep an eye on cookies. Ragi absorbs moisture fast so remove immediately from oven.
* Step 7
Cover the cookies with a dry cloth and store in airtight container after cooling. Enjoy healthy Finger Millet cookies!
