Winter Health in a pot: vegan bean minestrone
This soup is like a hug inside to out. Easy and quick to make, a perfect meal with crackers, or if you like dairy, sprinkle with some grated parm and serve with homemade garlic-butter bread.

Cooking instructions
* Step 1
Heat oil in a soup pan. Fry onions, celery, carrots, bay leaf for 3 mins
* Step 2
Add potatoes and garlic. Fry for a few more minutes
* Step 3
Here’s a garlic hack: mince a bunch of garlic in the food processor; add some lemon. Scoop into little piles onto a parchment lined baking sheet. Freeze, then transfer to a ziplock bag. Garlic forever!
* Step 4
Drain the mixture keeping the liquid. Set veg aside. Add liquid back into soup pot. Add marinara, water, seasoning and bay leaf. Bring to a boil.
* Step 5
Add beans and drained veg. Bring back to a boil. Cool for 5 mins, or until the potatoes are almost fork tender. Add torn spinach, stirring. Add optional chopped chili.
* Step 6
Season to taste. Enjoy with crackers or garlic bread.
